With impeccable shells and meats filled to the brim, it’s only fitting that Shigoku means “ultimate” in Japanese. Shigoku oysters are grown in floating bags attached to stationary lines that ebb and flow with the tides. This wave action naturally tumbles them twice daily and chips away at the outer edge of the shell. This spurs the Shigoku to grow a more pronounced cup, with deep, full meats. These plump, pillowy meats give a burst of creaminess and moderate salinity, with a light cucumber finish, making this oyster gorgeous inside and out.
