The name “Kusshi” is Japanese for “precious,” and these oysters are lavished with extra attention while they grow. Twice daily tumbling gives them stunning, smooth shells and deep cups. They are grown in deep water in one of the most pristine wilderness regions of British Columbia, and the water quality is reflected in their light, ultra clean, creamy flavor. The plump, pillow-like meats completely fill their shells, which burst with a delicate sweetness upon first bite.
